Rosemary, thyme, sage, basil, and tarragon are all herbs that complement the flavor of roast chicken and can be used in combination with butter, garlic and lemon/orange.
For the most flavor, add a generous amount of fresh or dried herb to the chicken cavity before cooking.
Then chop the remainder and sprinkle on the outside skin of the chicken during the final basting (if you put it on too soon, the herbs will burn... or chop the herbs and mix with softened butter and rub inside the skin). Try it, it's delicious.
For another variation, try combining fresh oregano, thyme and parsley and apply both inside and outside as above.
Think about making a pesto with all of the herbs. It is a great way to pre-rub the chicken right before you cook it! Make sure you get underneath the skin, as that will add a level of decadence to the final product.
