Ground chicken doesn't have to be boring. It can be used in most recipes in place of ground beef, but the trick is that it needs a lot more spice than beef. Or try this Buffalo Chicken Blue Cheese Meatloaf :
2/3 cup old-fashioned oats
1/2 cup fat-free milk
2-1/2 tablespoons buffalo wing sauce
1 lb ground chicken
1/2 cup finely chopped celery
1/4 cup shredded carrot
1/4 cup finely chopped sweet onion
2 large egg whites, slightly beaten
1/4 teaspoon salt
2 oz. Crumbled reduced-fat blue cheese
Preheat the oven to 350 and lightly grease a loaf pan. Combine oats and milk in a bowl and let stand for 3 minutes until the oats begin to soften.
Stir in wing sauce; add chicken, celery, carrot, onion, egg whites and salt. Mix well, then add blue cheese last. Fold into loaf pan and cook for 35-40 minutes or until done.
