Lemon Chicken or Orange Chicken?
A favorite recipe is to wash and then quarter a lemon and insert the pieces in the chicken cavity along with the butter and/or garlic.
Lemon and butter seem to complement the chicken flavor and insure a moist breast. You can squeeze out the cooked lemon just before serving for even more great lemon flavor.
Orange also complements the flavor of chicken; use an orange in place of the lemon for a sweeter variation. Again, squeeze some of the cooked orange over the meat just before serving for a stronger flavor. The zest of cooked lemons and oranges bring a wonderful fresh flavor, post cooking.
Additionally, prior to roasting the chicken, many insert slices of lemon and oranges between the skin of the bird and the breast. As the chicken cooks, the juices from the citrus absorb into the chicken keeping it moist and flavorful.
