Note: These recipes are for chicken drumsticks, and are not chicken thigh recipes. In a shallow bowl, combine one teaspoon kosher salt, one teaspoon freshly-ground black pepper, and two cups grated Parmesan cheese. In a separate bowl, beat one egg until lemon-colored, then dip drumsticks in the egg, then the cheese mixture, and arrange on a shallow, lightly-greased roasting pan. Bake at 400 for 40 minutes or until done.

- 6 drumsticks
- 6 slices center-cut bacon
- 1/2 onion, coarsely chopped
- 1/4 lb. baby Dutch yellow potatoes
- 1 tablespoon dried chives
- 1 tablespoon dried basil
- 1/2 tablespoon garlic powder
- 1/2 tablespoon adobo seasoning
- 1/2 tablespoon freshly-ground black pepper
- 1/2 teaspoon kosher salt
Preheat oven to 400 and wrap each chicken leg in a piece of bacon, trying to cover as much of the chicken as possible. Place the wrapped chicken in a 9x13 baking dish, season with salt and pepper, and cover with chopped onion.
Push the potatoes down into the spaces around the chicken and against the side of the pan. Combine the spice mixture in a small bowl and sprinkle over the top of the chicken and potatoes. Bake for 1 hour or until the bacon is crisp and the potatoes are tender.
